PROJECT 1: Monthly Menu cylce and Newsletter Creations

My past internship took place at The Child Development Centers Inc, and this is where I gained the tools and skills to create brochures and menu meal plans. This agency provided a place for low income elementary aged children to go before and after school hours.  The program not only focused on providing tutors for homework but also provided nutritional guidance, snacks, and meals. Children would have meals and snacks as directed by the CDI agancy.  This is where my job came in.  I was given the job of attedning the school sites with a nutritionist.  School visitations were made, and we would visit the low income schools in the area and perform site visits where we made sure that the school programs were following the given menu cycles that the CDI agency provided each of the locations to follow.  They funded the programs with money in order to provide the children with the food on each of the menus.  I helped create these menus with a price list for how much each item costed as well as food items that could be followed and used in a cycle throughout each of the months.  The food items had speciifc regualtions that had to be followed based on nutritonal values for each meal.  Another job that I had to perform during the intership was writing a article for the montly newsletter that was given to all of the sites for the children to take and their families.  The newsletter taught the families and their children about something that could benefit their health and teach them how to live healthier lifestyles.

PROJECT 2: Restaurant and Dinner Construction

For my second project, a classmate and I put together a dinner for two of my other classmates.  We had to make a dinner and provide everything from a menu to cooking the whole dinner in one hour. The dinner was all made from scratch and was plated just like it would be if you were at a sit down restaurant.  I came up with the menu of an Italian style kitchen, and named the restaurant "Mama's Cucina". I chose a main course, desert, and beverage that all paried together to create a full meal to put on our menu.  The pictures on the right show the finished menu and the finished plate of food that was served.  We made a chicken marsala with green beans and pinenuts for our main course dish, and for dessert we had a mixed sweet fruit dish.  The Table setting is the bottom picture with what the whole table looked like when the meal was completed.

 

 

 

 

PROJECT 3:  Healthy Eating Power Point and Lesson Plan

For my third project I made a educational power point about healthy eating when you are pressed with time and always on the go. In addition to this, I made a lesson plan about sodium intakes and how to eat the right amount of salt each day.  I chose these two topics to put together and create a lesson plan because not only are the foods we are eating as college students on campus unhealthy and lacking key nutrients that we need each day, but these foods that you would buy on the go and that are easy to make usually have high amounts of sodium in them.  I felt that would be a useful tool to have in addition to how to prepare healthy foods when you are short on time.
